  • 1 medium onion finely chopped
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper freshly ground
  • 1 clove garlic finely chopped
  • 1 1/2 cups long grain white rice rinsed
  • 2 1/3 cups chicken broth low sodium
  • 6 sprigs fresh thyme
  • 1/2 cup fresh flat-leaf parsley chopped

Instructions
  1. Press Sear/Sauté on the Instant Pot. Let heat for 3 minutes, then add the olive oil.
  2. Add the onion, salt, and black pepper to the pot. Cover with the lid and cook, stirring occasionally, until the onion is just tender, 5 to 7 minutes.
  3. Stir in the garlic and cook, uncovered, for 1 minute.
  4. Add the rinsed rice to the pot and mix to combine. Add the broth and thyme, and press Cancel.
  5. Cover with the lid and press Rice. Cook until the rice is tender and the liquid is absorbed, about 25 minutes. Press Cancel.
  6. Remove and discard the thyme. Fold in the parsley.
  7. Spoon the rice pilaf into a serving bowl.

    I only used onion and garlic because thats how i make my other onion rice. It was great. Easy. Takes about 15 mins.

    This is a multicooker recipe, so it has a glass lid on top. You could do this in the instant pot but you wouldn’t cover the pot.

    All the family loved this and I made it with Uncle Ben’s Brown rice. It has a good flavor , no need for any other sauce. I served it with Pork ribs.

    Just got my Instant Pot yesterday. Made hard boiled eggs this morning (perfect) Rice Pilaf at dinner as a side dish. This recipe was delicious! I added a few finely diced carrots and a little more salt. Overall a great recipe, and a lot of fun to cook!

    I need to double or triple this recipe to serve a larger group (12-14). Can I triple the recipe in the pot? If not, will keeping it warm cause the rice to over-cook and stick together?

    Used 1 tsp dry thyme instead of fresh and basmati rice. So flavorful! Will be making this again soon.
