Ingredients
For the cake:
- 1⅔ cups oat flour 150 g
- ⅓ cup almond flour 60 g
- ½ cup Cocoa Powder 40 g
- 5 tbsp sweetener of your choice monk fruit, erythritol, panela, coconut sugar), 60 g
- 2 eggs
- 1 Egg White
- 2 oz regular milk or plant-based milk 65 ml
- 1 tsp baking powder or baking soda
- 1 tsp vanilla extract
For the fudge:
- 2 tbsp nut butter (peanut cashew, almond, hazelnut)
- 1 tbsp cocoa powder or 2 squares dark chocolate
- 2 to 3 tbsp boiling water

Instructions
- In a bowl, mix all the cake ingredients until you have a homogeneous batter.
- Pour the batter into a pan (previously greased or lined with parchment paper).
- Using the Instant Vortex panel, press Bake15 Minutes and temperature to 340°F (170°C).
- When the time is up, remove the cake and turn it over.
- Using the Instant Vortex panel, press Bake, then set time to 12 Minutes and temperature to 340°F (170°C). Set aside.
- For the Fudge, mix the peanut butter with cocoa or chocolate in a separate bowl, and the boiling water until it forms a paste. Frost the top of the cake with the fudge until it is completely covered.
- Decorate with your favorite toppings; I chose goji berries and pumpkin seeds.
- Finally, use a toothpick to cut out small triangles for the Christmas tree.
