I was pleasatly surprised at how fantastic this is – as well as easy for a quick healthy breakfast!!
I love this dish. I just made it for lunch and really savored it. I think one could probably cut the butter and coconut oil portions in half (while leaving everything else the same). The other ingredients are more than capable of holding together the flavor of the dish.
Doubled the recipe! It was great, a good combination of flavors! And the sliced almonds added just the right amount of texture. Quick, easy, healthy, satisfying. Perfect for regular go to staple. To save even more time one might saute on the stove while the eggs are in the instapot.
Can I use swiss chard instead of kale? The bugs ate my kale. and I don’t want to buy any.
Simple and delicious, though I sub pecans for almonds. I’m going to top the next batch with crumbled bleu cheese and maybe a few thin slices of green apple.
