Ingredients
- 1 lb (500 g) crayfish peeled and rinsed
- ½ onion diced
- 1 small head garlic (10 cloves garlic) chopped
- 2 tomatoes peeled and diced
- 1 cup crayfish shell or fish broth
- 3 tbsp ají amarillo puréed, Peruvian yellow pepper
- chopped cilantro
- Optional: chopped ají limo lemon drop pepper

Instructions
- Place the inner pot inside the Instant Pot. Press Saute and set time to 15 Minutes. Add the onion and garlic until golden brown.
- Add the tomatoes and ají amarillo. Sauté lightly and add the crayfish. Change the setting to Meat/Stew, set time to 5 Minutes. Add the broth, cilantro and ají limo (optional).
- Lastly, serve with rice or other side dish of your choice.
