Ingredients
- 2 tbsp corn starch
- ½ cup flour
- 2 white fish fillets
- Salt and pepper to taste
- 2 eggs beaten
To serve:
- Sliced sweet potato
- ⅓ red onion julienned
- ½ bell pepper julienned
- Salt to taste
- Juice of 2 lemons
- 2 tbsp olive oil

Instructions
For the fish:
- Combine the corn starch with the flour.
- Season the fish, add 2 beaten eggs and coat.
- On the Instant Vortex control panel, press Air Fry, then set time to 9 Minutes and temperature to 365ºF (185°C). Press Start.
- Once Add Food. appears on the display, dredge the fish in the dry mixture and add to the basket. Close tray and let cook.
For the sweet potato:
- Brush the sweet potato with olive oil and season with salt and pepper.
- On the Instant Vortex control panel, press Bake, then set time to 6 Minutes and temperature to 355˚F (180˚C). Press Start.
- Once Add Food appears on the display, add the sweet potatoes to the basket. Close tray and let cook.
To serve:
- Mix the onion and sweet potato, season with salt, lemon juice and olive oil.
- Put the sweet potatoes, the fish and the salad on the bread of your choice; garnish with chopped coriander.
