Beef Tongue in Tomato Broth
Farmed Totoaba Teriyaki, with Sesame and Peanuts

Ingredients
- 2 tbsp low sodium soy
- 2 tbsp ponzu sauce (you can substitute for more soy)
- 2 tbsp honey
- Juice of 1 lemon
- 1 tbsp sesame oil
- 1 tsp corn starch
- Salt and pepper to taste
- 2 farmed-totoaba fillets 7 oz (200 g) each
- Black and white sesame seeds to taste
- Roasted unsalted peanuts chopped small
- Garnish with finely chopped chives
- Serve with gohan-style or steamed rice

Instructions
- Reduce the soy sauce, ponzu, honey, lemon juice and sesame oil in a hot skillet. Add the corn starch and mix well.
- Season the fish, spread the teriyaki sauce and add white and black sesame seeds and peanuts.
- On the Instant Vortex control panel, press Air Fry, set the time to 8 Minutes and the temperature to 395°F (200°C). Press Start.
- When Add Food appears on the display, remove the basket and arrange the fish. Put the basket back in the Instant Vortex.
- When Turn Food appears on the display, flip the food.
- Serve over a layer of rice and sprinkle with chives.
