Ingredients
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 1/2 lb chicken tenders
  • 1 tsp Italian seasoning
  • 2 garlic cloves minced
  • 1 medium shallot small diced
  • 3 cups baby spinach
  • 8 oz sun-dried tomatoes in oil drained, chopped roughly
  • 1 1/2 cups heavy cream
  • 1 cup chicken stock
  • 1/2 cup cream cheese
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 lb penne pasta
  • salt and pepper to taste
  • For Garnish: chili flakes, Italian chopped parsley, and extra grated parmesan cheese if you desire.

Instructions
  1. Season one side of the chicken generously with salt & black pepper on the plate.
  2. Select the SAUTE button on HIGH, and then press START.
  3. Wait until the screen shows HOT then add the olive oil into the inner pot.
  4. Add the chicken and cook for 3-4 minutes to brown them.
  5. Set aside the cooked chicken to cool off. Later cut them into 1-inch pieces.
  6. Add the butter and shallots, and cook for 2 minutes, then add garlic and cook another 30 seconds until fragrant. Press the CANCEL button.
  7. Add heavy cream, chicken stock, sun-dried tomatoes, Italian seasoning, and penne pasta. Give it a quick stir and make sure the pasta is thoroughly soaked in liquid.
  8. Add chopped chicken tenders on top.
  9. Secure lid for pressure cooking. Select PRESSURE COOK on HIGH, set time for 5 minutes, then press START.
  10. When the program is finished, Quick Release the pressure then press CANCEL. Add the freshly grated parmesan cheese, cream cheese, and baby spinach. Stir the pasta until the cheese is melted and spinach is combined well (for about 1 minute) and season with salt and pepper.
  11. Serve it immediately with the chopped parsley, chili flakes, and extra grated parmesan cheese on top if you desire.
