Creamy Polenta
With just 5 ingredients, you can make a show-stopping bowl of heartwarming polenta. While everyone has their special way of preparing polenta, we prefer to prepare ours with the nutty flavor of grated Parmigiano Reggiano. Serve it with a dollop of sun-dried tapenade and some parsley.

  • 3tbsp unsalted butter
  • 1 small shallotdiced
  • 1cup corn meal
  • 4cups Water
  • 1/2cup freshly grated Parmigiano-Reggiano cheeseplus more for garnish
  • 1tsp salt
  1. Select SAUTÉ, HIGH. Select START.
  2. Add 1 tbsp butter into the inner pot and melt it.
  3. Add diced shallot and sauté for one minute.
  4. Add the corn meal, water, and salt into the inner pot and mix.
  5. Set the timer to 7 minutes (00:07), stirring occasionally.
  6. Once the timer goes off, the polenta should be creamy, and the individual grains are cooked. If not, cook for another 2-3 minutes.
  7. Select CANCEL. Add the remaining butter to the polenta until partially melted.
  8. Mix the Parmigiano-Reggiano cheese into the polenta until the cheese has melted.
  9. Place the Pressure Cooking Lid and let sit for 5 minutes.
  10. Remove polenta from inner pot, serve. Salt to taste.
Recipe Notes

Serve with a spoon of sun-dried tapenade, a sprinkle of chopped Italian parsley and some more grated Parmigiano Reggiano.
