Instructions
  1. Select SAUTÉ-High, set time to 30 minutes, then press START.
  2. Add 1 tbsp butter into the Inner pot and melt for 1 minute.
  3. Add diced shallot and sauté for another minute.
  4. Add the polenta, water, and salt into the Inner Pot and whisk until incorporated.
  5. Once you add all ingredients, set the timer to 7 minutes. Stir occasionally.
  6. Once the timer goes off, make sure the polenta texture is creamy and the individual grains are cooked. If not, sauté for an extra 2-3 minutes.
  7. Press CANCEL. Add the remaining butter to the polenta until partially melted. Mix the Parmigiano-Reggiano cheese into the polenta until the cheese has melted.
  8. Close the Pressure Cooking Lid and let sit for 5 minutes to thicken. If you'd like, serve the polenta with a spoon of sun-dried tapenade and sprinkle some chopped Italian parsley and Parmigiano-Reggiano cheese on top.
