Conger Eel with Vegetables

Ingredients
- 1 pepper finely diced
- ½ red onion cut into strips
- 2 tbsp olive oil
- ½ tsp dill
- 1 tsp salt
- ½ tsp onion powder
- 1 lb fresh conger eel skinned, in 2 pieces, 500 g
- Salt and pepper to taste

Instructions
- In a medium-sized bowl, mix the pepper with the red onion, olive oil, dill, salt, and onion powder. Set aside.
- Cut 2 pieces of aluminum foil big enough to wrap the fish and vegetables completely.
- Place a piece of fish on each piece of foil. Season with salt and pepper to taste on both sides. Divide the vegetable mixture into two halves and spread out each half over the two pieces of fish.
- Fold the aluminum foil so that the fish and vegetables are completely wrapped.
- On the Instant Vortex Air Fryer control panel, press Bake and then set time to 10 Minutes and temperature to 400˚F (205˚C). Press Start.
- Once Add Food appears on the display, open the basket and place the fish wrapped in aluminum foil on the rack. Close.
- Once the time is up, remove the fish wrapped in aluminum foil using tongs. Serve hot.
