  • 2 tbsp vegetable oil
  • 1 lb unpeeled red potatoes diced
  • 2 medium leeks halved and thinly sliced
  • 2 stalks celery diced
  • 1 bulb fennel diced
  • 1/2 yellow or red bell pepper diced
  • 2 tsp chopped fresh thyme
  • 1 1/4 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp all-purpose flour
  • 2 cups clam juice
  • 1 cup Water
  • 1 1/2 lbs cod cut into 1-inch pieces
  • 1 cup frozen corn
  • 1 cup half and half
  • 1/4 cup fresh Italian parsley finely chopped

Instructions
  1. Press Sauté; heat oil in Instant Pot®. Add potatoes, leeks, celery, fennel, bell pepper, thyme, salt and black pepper; cook about 8 minutes or until vegetables are slightly softened, stirring occasionally. Add flour; cook and stir 1 minute. Add clam juice and water; mix well.
  2. Secure lid and move pressure release valve to Sealing position. Press Manual or Pressure Cook; cook at high pressure 6 minutes.
  3. When cooking is complete, press Cancel and use quick release. Use immersion blender to blend soup just until slightly thickened (soup should not be completely smooth).
  4. Press Sauté; add cod, corn, half-and-half and parsley to pot. Cook about 2 minutes or until soup begins to simmer and fish is firm and opaque, stirring occasionally.

    Great recipe! Easy to make and can be modified to be vegan. I am vegan and my husband will not give up meat so I was able to take this recipe and make it as is for my husband but before adding the cream and Cod I took out a bit for myself and it was delicious

    Concur with 6-7 minutes for the fish to cook. Excellent recipe. Will fix again. I may try salmon next time! Highly recommended!

    This is a tasty recipe that my family enjoys. You will need to allow enough time to prepare and completely cook this meal. The recipe is good and worth doing.

    However it takes about an hour to chop up all the ingredients. The total time for the pot to reach the hot temperature for the saute, build up stream for the pressure cook cycle, let off steam and then saute to finish the receipe is about 1 hours and 20 minutes.

    Half and Half, is half whole milk and half cream. It can be purchased in North America. If you cannot locate any use half whole milk to half cream.

    We loved it! I used single cream (thanks for letting me know what half and half is by the way). I also agree that the fish takes more like five minutes rather than two. Gorgeous.

    Tastes as imagined while reading through the recipe. Really enjoyed this. Fish took more like 6-8 min to cook. It was an easy recipe. Lots a choppin.

    We really enjoyed this chowder. True to my nature, I made adjustments but kept the ratios and cooking time. The fish does need about 5 minutes.
    No fennel, substitute a Tbs marjoram
    Dry thyme is fine
    Add 4+ cloves garlic minced
    Add 1/2 medium onion diced
    Could handle clams or other seafood in addition to cod.
    Finish the pot with a bit pat of butter.
