Ingredients
  • 3pounds beef Short Ribs
  • 1tablespoon vegetable oil
  • 1/2teaspoon black pepper
  • 1/4teaspoon salt
  • 1cup white onionsdiced
  • 28ounces crushed tomatoes1 can
  • 5medium poblano peppersroasted, peeled, seeded, cut into 1/4-inch thick strips
  • 1-2 chipotle peppersin adobo sauce, finely chopped
  • white onionchopped
  • cilantrochopped
  • Lime wedgesoptional
Instructions
  1. Season beef with black pepper and salt.
  2. Add beef, onion, tomatoes, poblano peppers and chipotle peppers to the Instant Pot and stir to combine.
  3. Cook on slow cooker setting on High for 4 to 6 hours or on Low for 8 to 10 hours, or until beef is fork tender.
  4. When time is up, slow release pressure. Remove beef; keep warm.
  5. Skim fat from cooking liquid. Spoon cooking liquid over beef.
  6. Sprinkle with chopped onion and cilantro, as desired. Garnish with lime wedges, if desired. Enjoy!
