Ingredients
Spice Mixture
  • 2 tsp kosher salt
  • 2 tsp dried oregano
  • 1 tsp black pepper
  • 1 tsp cinnamon
  • 1 tsp cumin
  • 1/2 tsp ground cloves
  • 1/2 tsp turmeric
  • 1/2 tsp smoked paprika
Other Ingredients:
  • 2 lbs boneless skinless chicken thighs
  • 2 tbsp olive oil
  • 1 red onion (small), quartered
  • 1/2 cup chicken broth
  • Pita and your choice of toppings such as tzatziki sauce, sliced cucumbers, chopped tomatoes, hummus, olives

Instructions
  1. In a small bowl, combine Spice Mixture ingredients. In a ziplock bag, combine 1 tbsp oil, chicken thighs and spice mixture. Mix to thoroughly coat chicken and refrigerate at least 30 minutes up to 24 hours.
  2. Add 1 tbsp olive oil to the Instant Pot. Using the display panel select the SAUTE function. Add the quartered onion to the marinade bag and toss to coat.
  3. When oil gets hot, transfer the chicken and onion to the pot and brown on 2 sides, 3-4 minutes per side. Meat will not be cooked through. Do not crowd the pot--you may have to work in batches. Transfer browned meat to a shallow dish and cover loosely with foil.
  4. Add broth to the pot and deglaze by using a wooden spoon to scrape the brown bits from the bottom of the pot.
  5. Put the meat back into the pot, turning once to coat.
  6. Turn the pot off by selecting CANCEL, then secure the lid, making sure the vent is closed.
  7. Using the display panel select the MANUAL function*. Use the +/- keys and program the Instant Pot for 5 minutes.
  8. When the time is up, let the pressure naturally release for 5 minutes, then quick-release the remaining pressure.
  9. Carefully remove the meat from the pot to a cutting board and cut into bite-sized pieces.
  10. Serve chicken with warmed pita and your choice of toppings such as tzatziki sauce, sliced cucumbers, chopped tomatoes, hummus, olives.

    Gee, would you like to list these recipes buy by appliance instead of taking it for granted they I own everything that you can think of to manufacture? I think I saw two recipes listed for the vortex, but I am really niot going to sit here for two hours going though 1000 recipes to extract those that may be of use to me. I think, at least this part of your website, is for shit! The money on this item has been spent, now how much of my time has to be wasted to get it up and running.

    We made this and it was fantastic. After mixing all the spices I was worried they wouldn’t come together well but it was absolutely fantastic! Worked really well with homemade pita too.

    Now, in the recipe, you list:

    1 red onion (small), quartered
    1/2 cup chicken broth
    Pita

    Twice. I think that’s a mistake, but I ended up using the second red onion as a topping so it wasn’t an inconvenience for me

    This is getting added to the rotation for sure! The only thing I would change is a little less cinnamon next time. I was only able to marinate for half an hour but it was still increadible!
