Chicken Fajitas

Fajitas are an excellent meal that’s high in protein and filled with vegetables. It’s easy to make a quick batch. By searing the chicken, you get nice browned pieces, and a short pressure cook time provides perfectly tender-crisp vegetables. Ingredients
- 2 tablespoons olive oil
- 1 pound boneless skinless chicken breasts, sliced into 1/4"-thick strips
- 1 (1-ounce) packet fajita seasoning
- 1/2 cup lime juice
- 1/2 cup chicken broth
- 2 medium green bell peppers seeded and cut into 1/2" slices
- 1 medium red bell pepper seeded and sliced into 1/2"-thick slices
- 2 teaspoons cornstarch
- 1 medium yellow onion peeled and sliced into 1/4"-thick slices
- 8 (6-inch) flour tortillas warmed
- 1 medium lime cut into wedges

- Press the Sauté button on an Instant Pot® and allow to heat until the display reads Hot. Add olive oil, chicken, and fajita seasoning to the pot. Sauté until chicken is fully cooked, about 7 Minutes. The internal temperature should be at least 165°F.
- Press the Cancel button. Pour lime juice and broth into the pot and use a wooden spoon to scrape any browned bits from the bottom. Add bell peppers and onion to the pot and stir to combine. Place the lid on the Instant Pot® and click into place to close. Press the Pressure Cook button and adjust the timer to 1 Minute. When the timer beeps, quick-release the pressure until float valve drops. Unlock lid.
- Press the Cancel button. Scoop
1/4 cup liquid from the pot into a medium bowl and whisk with cornstarch until smooth. Press the Sauté button on the Instant Pot® and stir in cornstarch mixture. Continue to sauté 5 Minutes until mixture thickens. Spoon into warmed tortillas and serve with lime wedges.
