Cheese Fingers and Marinara Sauce Potato Skins

Ingredients
For the potatoes:
  • 4 medium potatoes
  • ¼ cup Greek yogurt or sour cream
  • Salt pepper, garlic, and paprika powder to taste
For the cheese fingers:
  • 12 mozzarella cheese sticks
  • 2 eggs beaten
  • 1 cup crushed pretzels
  • ½ cup breadcrumbs
  • 1 cup whole wheat flour
For the marinara sauce:
  • 1 tomato grated
  • 1 tbsp ketchup
  • ½ tsp oregano
  • Salt pepper, and garlic powder to taste
To serve:
  • Greek yogurt or sour cream

Instructions
  1. Put the potatoes in the Instant Pot with enough water, and salt. Close and lock the Instant Pot® lid. Make sure the steam release handle is turned to Sealing. Press Pressure Cook, pressure level High, and set the time to 15 Minutes,
  2. When done, press Cancel and turn the steam release handle to Venting. Once all the pressure is released, open the lid and let cool completely. Cut into quarters, being careful not to break or peel them. Then use a spoon to remove part of the inside of the potato and empty it in a bowl. Add yogurt, half of the bacon and the cheese, and season.
  3. Place this mixture on the potato skins, adding the remainder of the bacon and cheese on top.
  4. On the Instant Vortex control panel, press Air Fry, set the time the time to 10 Minutes and the temperature to 395ºF (200ºC). Press Start.
  5. When Add Food appears on the display, remove the basket, add the potatoes, sour cream and/or Greek yogurt, to taste. Put the basket back in the Instant Vortex.
  6. While the potatoes are cooking, coat the cheese sticks with flour, then egg and crushed pretzels, repeat until the cheese has no uncoated spaces; repeat for all the sticks. Drizzle with avocado oil.
  7. On the Instant Vortex control panel, press Air Fry, set the time the time to 10 Minutes and the temperature to 395ºF (200ºC). Press Start.
  8. When Add Food appears on the display, remove the basket and add the cheese fingers. Put the basket back in the Instant Vortex.
  9. Flip the cheese fingers when prompted by the Instant Pot.
  10. Mix the ingredients for the marinara sauce.
  11. Serve hot, accompany with the sauce and enjoy!
