  • 1/2 cup half and half
  • 1/2 cup grated sharp cheddar cheese

Instructions
  1. In a heatproof bowl, mix the cauliflower, cream cheese, half-and-half, Cheddar cheese, salt, and pepper together. Cover the bowl with aluminum foil.
  2. Pour 2 cups of water into the inner cooking pot of the Instant Pot®, then place a trivet in the pot. Place the bowl on the trivet.
  3. Lock the lid into place. Select Manual or Pressure Cook and adjust the pressure to High. Cook for 5 minutes. When the cooking is complete, let the pressure release naturally for 10 minutes, then quick-release any remaining pressure. Unlock the lid and carefully remove the bowl. Remove the foil.
  4. Place the cooked cauliflower under the broiler, and broil until the cheese is brown and bubbling, 3 to 5 minutes. Serve immediately.

    Nice flavour but way too much salt and pepper. Especially salt. Perhaps 1/4 teaspoon of salt and 1/2 teaspoon of pepper.

    Way too much salt and pepper. I should have listened to my instincts to cut it in half. I ended up adding another 2 cups of raw cauliflower rice and stir it up. That helped…a little.
    I did like the flavor and I will try it again without so much salt and pepper.

    Way too much salt. Not enough cheese. Are you sure you tested these recipes exactly as printed?

    Good flavor, too much salt…I should have minded the warnings on that. I used frozen cauliflower rice and doubled the recipe without doubling the cook time, mistake. And if using frozen cauliflower, I think you can get away with only 1/2 the Half and Half.

    What do they mean by a heatproof bowl? Is this glass or is this metal? Is this something provided by Insta pot?

    Any heatproof bowl that comfortably fits in the inner pot can be used; look up Pot-In-Pot cooking for more information.

    I should’ve known to stay away from the reviews. It comes out soupy, lacks flavor and leaves you having to bake it in the oven. 1/2 tsp of salt in no way flavors this dish enough. I think the frozen cauliflower does add more liquid but this needs to be clarified in the recipe. This is much easier to make in the oven. I would stay away from this recipe until they make a couple tweaks. So disappointed!

    Over all it was pretty tasty. I used extra cheese and frozen cauliflower rice, and should have used less half and half. I also forgot to cover the bowl with foil. I drained out some liquid when i took it out of the IP and left in the broiler for like 20 minutes, adding cheese to the top at the end.

    I enjoyed this meal. Next time I will probably cook it for another minute or 2 because the cauliflower was a bit crunchy, but it didn’t ruin it for me. I didn’t find it too salty either.

    After reading reviews i used less salt. That was a mistake, i will be adding more. Next time i will use much less half and half (maybe half of what the recipe says). It was very soupy but before i put it in the broiler i drained it. Put some cheese on the top. Tasted just fine, just had to add some salt. My daughter should love it too 🙂

    I used 2 bags of frozen cauliflower rice (Costco), rinsed and (important) firmly pressed out excess water in a fine mesh strainer. This came to 3 cups.
    Used 3 Tbls cream cheese (1.5 oz), same amnt of half n half, cut back on salt & pepper based on comments from others.
    Added 2 slices bacon, crumbled, and a few dabs of ghee. Doubled cheese to 1c.
    Increased pot cook time to 8 mins. Stir and Add more cheese on top when put under broiler.
    Second time making it I added a little onion.

    Don’t waste your time. I saw the negative reviews. But with an average of 4 stars i thought they weren’t the average. I added some cook time (7 min total at high pressure. 10 minutes natural pressure release). I used fresh/raw cauliflower rice. It was soupy and undercooked. Wish i could send in a picture. Very disappointing.

    Mine turned out very soupy. It did have great flavor though. We decided to put it in bowls and use it for dipping bread. It did “set up” eventually but not enough to serve as a side. if I make it again I will use bigger pieces of cauliflower.

    Yielded raw, soupy, salty cauliflower in a bowl. Weird b/c usually the recipes on this site turn out as described.

    For those who are having trouble getting the dish to cook, please ensure that you are either using a metal dish, or if you’re using glass, to increase cook time by 4-5 minutes as glass does not conduct heat as well as metal. I tested this using a metal dish. I hope that helps!

    I would use less half and half and cook it abit longer because the cauliflower rice was abit hard but all in all we liked this recipe and will make it again.

    After reading the reviews, I made my own modifications and it came out nice. I did not add any salt or any cream. I use. Just a dash of black pepper and cayenne pepper. After ricing the cauliflower florets I squeezed in a towel as much moisture as I could get out of it before mixing it with everything else. I did pressure cook on high for 10 minutes. Naturally vent for 10min. A little extra cheese on top and then broil for 40 seconds.
