  • 2 tablespoons ghee the ghee butter can be subbed for a vegan butter to make the recipe vegan.
  • 10 cups carrots peeled and grated (About 6 packed)
  • 1 cup almond milk unsweetened
  • 3/4 cup sugar
  • 1 cup almond meal
  • 2 teaspoons cardamom powder
  • 2 tablespoons raisins
  • 1/2 teaspoon saffron
  • 2 tablespoon Almonds or pistachios, sliced (for garnish)

Instructions
  1. Turn Instant Pot to Saute mode and adjust to high heat. Add ghee and grated carrots. Cook for 2-3 minutes with the glass lid on.
  2. Add almond milk and close the lid with the pressure value set to sealing. Set Instant Pot to cook on Manual and adjust to high pressure for 5 minutes. Quick release pressure when time is up.
  3. Add sugar, almond meal, cardamom powder, raisins and saffron. Mix well.
  4. Turn Instant Pot to Saute on high heat again and cook for 5-7 minutes, until most of the liquids are evaporated.
  5. Garnish with sliced almonds or pistachios. Serve hot or chilled. Enjoy!

    I shredded 10 cups of organic carrots so that took a bit of time but it was worth it! This dish turned out delicious and it works for my family as we are all on a plant-based diet.

    Yummy! I served it with chopped up almonds, fresh ground Cardamom and coconut cream with a little bit of white sugar cooked into it. It was delish!

    I love this recipe! I really appreciate that it is vegan. I want to eat it with every meal. I have made it a couple times. I sweetened it with coconut sugar. I like crunch, so I added 1/2 cup of the silvered almonds. This past time I threw in some crumbled tofu to add some protien to it.
