Cajun Shrimp and Sausage Boil

This recipe is great on those days when you need to place everything in the pot and move on to the next task. The key to a good boil is making sure you add enough seasoning to flavor all the different ingredients sufficiently, but don’t worry: This recipe has you covered with a spicy Cajun seasoning and the classic Old Bay Seasoning. If you don’t have a go-to Cajun seasoning, try Slap Ya Mama seasoning, which is found in most grocery stores in the spice aisle. Ingredients
- 2 tablespoons salted butter
- 1 medium yellow onion peeled and chopped
- 1/2 pound andouille sausage sliced into 1/2" pieces
- 2 cloves garlic peeled and finely minced
- 1/2 pound baby red potatoes quartered
- 2 ears corn husks and silk removed, each cut into 3 pieces
- 1 cup Seafood Stock
- 2 tablespoons Cajun seasoning blend
- 1/2 teaspoon salt
- 1 teaspoon Old Bay seasoning
- 1 pound jumbo shrimp peeled and deveined

- Press the Sauté button on an Instant Pot® and allow to heat until the display reads Hot Add butter, onion, and sausage. Sauté 3 Minutes until onion is softened and sausage begins to brown. Add garlic and sauté 30 Seconds, then press the Cancel button.
- Add potatoes, corn, stock, and Cajun seasoning. Place the lid on the Instant Pot® and click into place to close. Press the Pressure Cook button and adjust the timer to 6 Minutes. When the timer beeps, quick-release the pressure until float valve drops. Unlock lid. Press the Cancel button.
- Sprinkle salt and Old Bay Seasoning on top of shrimp, then place shrimp on top of potatoes and corn. Place the lid back on the pot and click into place to close. Press the Pressure Cook button and adjust the timer to 2 Minutes. When the timer beeps, quick-release the pressure until float valve drops. Unlock lid. When done, shrimp will be C-shaped and pink. Serve warm.
