  • 1 pound chicken breast
  • 1 tablespoon Cajun seasoning divided
  • 1 tablespoon oil (olive or avocado)
  • 1 small onion diced
  • 3 cloves garlic minced
  • 1 tablespoon tomato paste
  • 1 1/2 cups rice rinsed
  • 1 bell pepper cut into large chunks
  • 2 cups chicken broth or vegetable broth

  • 1 pound chicken breast
  • 1 tablespoon Cajun seasoning divided
  • 1 tablespoon oil (olive or avocado)
  • 1 small onion diced
  • 3 cloves garlic minced
  • 1 tablespoon tomato paste
  • 1 1/2 cups rice rinsed
  • 1 bell pepper cut into large chunks
  • 2 cups chicken broth or vegetable broth

Instructions
  1. Cut the chicken breasts in half lengthwise to make them thinner. Season well from both sides with Cajun seasoning (about 2 teaspoons).
  2. Heat the Instant Pot by pressing the ‘Sauté’ button. Once display shows "hot", add the oil and sauté the onion and garlic until lightly browned. Turn off Instant Pot by pressing Cancel.
  3. Stir tomato paste into the pot. Then add rinsed rice, bell peppers, and 1 teaspoon Cajun seasoning (or more to taste and for more heat). Stir until well combined.
  4. Pour the broth over the rice mixture and carefully arrange the chicken breast halves over top.
  5. Close the lid and turn the valve to Sealing. Cook on Manual at high pressure for 10 minutes.
  6. When time is up, let the pressure release naturally for 10 minutes, then release remaining pressure by turning the valve to ‘Venting’.
  7. Once the pin drops, carefully open the lid. Shred the chicken with two forks, then stir to combine the Cajun chicken with the rice. You can adjust the seasoning to taste at this point.
  8. Serve with chopped cilantro. Enjoy!

    Very easy recipe with great flavor. My rice was very mushy/clumped together. What kind of rice did you use?

    I could eat this all the time! I used enriched rice last time and it came out kind of mushy, will try parboiled next time.

    Good simple recipe. Really enjoyed it. I fryed onions and then added garlic to prevent the garlic from burning

    Great flavor! I substituted quinoa for rice and it turned out delicious! I didn’t love the texture of the chicken but I rarely do 🙁

    Awesome! We skipped the onion and bell pepper. Even the slightly picky three year old ate almost everything on her plate! Will definitely make this one again.

    Mine came out mushy too but its tasty! I even forgot to season the chicken! Consdering that I only used 1/3 of the seasoning the recipe asks for it’s tasty! Will definite make it again!

    It was ok, feel free to go heavy on the cajun seasoning ours wasn’t too flavorful. We used jasmine rice which came out mushy so we’ll use a tad less liquid for next time. This was my first meal with the instant pot so I’m still learning. Don’t know if the rice was mushy because I left it on 13 min vs 10 or because of the type of rice. Will be making this again soon and update review.

    This was my very first dish and the display read burn within a few minutes. I started to panic and Googled the message burn. I opened the lid and scraped the bottom. Tried again and burn displayed again. I gave up and put the dish in the oven. Still tasted good but I added too much liquid. Rice was mushy but overall good flavor.

    Truly a great recipe. This was my second Instant Pot recipe and I found it very easy and very tasty.
    This was not the last time we made this dish!
    And: try your Cajun seasoning in advance! I had no look on the ingredients before using it. There is tons of chili in this one so our dish was REALLY hot 🙂

    Came out pretty good but be careful with subsitutions. We went with brown rice and didnt thInk about thw difference in cook time. Next will cook the rice in a rice cooker and the rest as listed and try that. Thank you. Corey

    Me and my wife tried this dish today and the flavor was great!

    We needed to add more seasoning once served but other than this, the flavor was good.

    The only negative is the rice was way too soft for our liking. I will research a way to keep the rice a bit more firm.

    We will try again with adjustments.

    I’ve made this twice now and love it. The only thing I do different is when everything is done cooking I pulled the chicken out and shred it on a platter place it back in the pot and mix it up.

    Super yum. I used most of the small can of tomato paste and used brown basmati rice from aldi (della brand). I also increased the rice because I only had a little left in the bag, so I upped the broth to accomodate for that. Very good. Do all the cutting before you start. Perhaps put the garlic in after the onion has cooked a bit.

    It tasted great! I used brown rice so I cooked it for 22 minutes. A little crusty on the bottom, so if you used brown rice, add a little more water.

    I made this exacrly like the instructions. It was really good! I added corn to it and the next time i will add salsa to the top right before serving. I felt it was a little dry for my liking. However it is REALLY good and we will be making it again soon

    Hi guys, I’m using the IP for the first time and making this recipe while trying figure out the IP. It states to cook and manual at high pressure for 10 mins. Since my IP is the latest version, mine doesn’t have the manual button, but the Pressure Cook button…I’m trying to increase the time, but it increases second by second and only goes to 4 mins! Am I doing something wrong?

    Easy and flavorful! But I think the rice could have used less time – it’s a bit more mushy than it should be.

    Just tried this…first time using the instant pot…like mostly everyone else here…the rice came out mushy…maybe less broth next time?

    Great flavour and chicken very tender. Basmati rice over-cooked so will reduce time. Maybe add more vegetables next time.

    Used parboiled rice and wasn’t mushy at all! Should have let pot cool after sautéing as “burn” message came up! Needed some pepper as was a little bland but over all really enjoyed!

    Not sure why this got so many high reviews. Ive made it twice once with white rice and the second time with brown. Both times the rice was soggy. The flavors were okay but everything had the same texture, mush. Unless you are a fan of cafateria food you can skip this recipe.

    This was my first thing to try in the insta pot, the hole family 3 of us loved it. It made enough to have left overs for 2 more servings. Great flavor very easy.

    As soon as my pot reached pressure it started to burn. It did this to me several times where I had to release pressure and scrape the bottom of the pot. Very frustrating. Not sure what i did wrong. I only used a cup of rice and 1 1/2 cups of broth, which is the same ratio that the recipe called for just less.

    This was so good! Had some spive to it. I read the other posts and decide not to cook as long so my rice wouldn’t be mushy. I used brown rice and 1 1/2 cups chicken broth. High pressure for 8 min, NR for 8 min and then QR. It was perfect!

    Like others in here, my rice was mush and the peppers were destroyed. A little bland but other than this, had decent flavor snd fairly easy to prepare

    OMG loved this! I used Arborio rice & 2 cups of broth (chicken oxo cubes) and one large breast and it was delicious. Will definately make again maybe cutting rice & broth in half as cooking for one now. Thanks for such a fast, easy and tasty meal.

    I found it bland, mushy, and i got the “burn” notification as well.
    I’d cook it for less time if i were ever to make it again, but that’s highly doubtful. I doubled the amount of spice in the first place which obviously did nothing.
    Easy, but not worth it IMO

    We enjoyed the flavor and the tenderness of the chicken and peppers. I have to agree with some of the others that the rice gets mushy. I think I might even add a little more liquid and cook my rice seperately

    Easy to make and pretty good – not something I’d rave about to anyone. Perhaps adding sausage would add some dimension and flavour. Added salt and would recommend adding another pepper as well.

    This recipe was so easy and very delicious! I would love a substitue for the tomato paste though… hate having to waste a small can for one tablespoon of paste. Does anyone have an alternative to that? Or make your own paste?

    Was ok. It was bland. Needs salt, pepper, more garlic, some kind of sausages. I used ratio 1:1 for rice and it wasnt mushy.

    Rice was a little mushy, chicken could use some more flavor.

    Tasted better after I let it sit in the fridge over night.

    Rice burned on bottom of insert while trying to get pressure up. I added more liquid and it happened again. Rice turned to mush because of the extra water Flavor was okay. I probably won’t make it again.

    Kept getting the burn warning. After three attepts – adding more broth every time, I had to toss it into a pot and cook it in the oven. Stay away from this recipe.

    Made this for dinner tonight and it was delicious!! I actually had 2 lbs of chicken so added an extra 2 tsp of cajun seasoning to chicken before placing into IP. Also after placing chicken into IP, I added about 1/2-3/4 cup of water just enough to cover chicken. Came out great!!

    Well, I made this today. I got the burn notice twice – I have to pots – so switched out the liner hoping that would fix it. The last time I put it all in a bowl and finished the recipe PIP. I had plenty of cajun spice so it tasted okay, I would just start it “PIP” next time and skip the burn. Simple recipe otherwise.

    Ugh. So frustrating. You CAN NOT follow the directions or it will burn notice your IP everytime. Who wrote this recipe?? So maybe if the chicken goes on the bottom and rice on top?? It just burns the rice to fast

    Got the burn display too. Shut pot down, and bled off pressure. Caught it early enough not to ruin the dish. Rice was pretty much done at that point. Did not lose much to the burning on the bottom.

    Added celery to the onion for more of the cajun feel

    Used an entire 6 oz. can of tomao sauce, a cup of brown rice, 2 cups of vegetable broth, and extra seasoning. We enjoyed this dish. Next time, will add more chunks of red bell pepper.

    I agree with others that the rice gets mushy and not much flavor. The chicken turned out good and was easy to shred with forks. I too agree that this would be very good if you were to add some sausage to the recipe.

    Mine came out perfect. So glad i read reviews. Used 1.25 lbs chicken. 2 tbs tomato paste. 1 1/2 cup chick broth. Mixed really well prior to adding broth. 8 mins hi pressure. 9 mins NR

    I Read the reviews first and added extra Slap your Momma seasoning and broth. I did get the burn signal but let it go and it cooked perfectly. We enjoyed it.

    I used petite diced tomatoes instead of tomato paste. Also added celery and a little more seasoning. It tastes amazing!

    I read all the comments, and decided to not mix the rice with the veggies but instead pour the stock in, mix well, then the rice, light stir, stack the chicken, and it turned out very well. My step-daughter loves curry so I used curry seasoning instead of cajun.

    After reviewing comments, I made a tweaks. Added more seasoning. Added rice after mixing in veggies and stock. Rice was still a bit mushy but all in all the dish came out good. My first of many instant pot meals.

    UPDATE:
    DO NOT ATTEMPT THIS RECIPE!!!
    Made the recipe again, this time for company. Was eager to show off the wonders of my brand-new brand-name Instant Pot. Big mistake.

    Got the burn notice. Kept adding water, scraping the bottom, and trying again. Burn notice every time. Finally yanked the inner pot out and threw it into a 350 degree oven to finish it. Mushy rice, tough chicken, disappointed company. NEVER AGAIN.

    I made this twice and each time it was great. After reading the comments of others I decide to add sauages to the recipe. I cut up the sauages and mixed it with the rice. I also added the whole 6oz can of tomato pase.

    Turned out great, but needed more salt for our taste. I used frozen chicken thighs instead of breast & used long grain & wild rice. I cooked for an extra 5 minutes due to frozen chicken & wild rice. Didn’t have cajun seasoning so made my own. My husband liked the kick but I don’t so i added sour cream to my portion

    Not going to lie. I made this recipe exactly how it called and I, personally, was not impressed. The overall flavoring was pretty bland. Also found out that with the new Ultra 80 Instant Pots, you have to adjust the recipe for more liquid because you often times will get the BURN error on the front of your device. Google that, and you will see!

    I cooked it for 9 instead of 10 minutes, and the chicken was perfect. I also used 14 ounces of broth and 2 ounces of water, as my can contained only 14 oz. The rice was a bit soggy, so I’d try it again
    with just the 14 ounces broth ans not supplement with water.
