Buffalo Tofu Bites

Ingredients
- 14 oz extra firm tofu
- Cooking spray oil
For the batter:
- 1 cup unsweetened almond milk
- ¼ cup buffalo sauce
- 1 cup cornstarch
For the breading:
- 1 cup panko
- 1 tsp smoked paprika
- ½ tsp salt
- ½ garlic powder
- ½ black pepper

Instructions
- Press the tofu by placing it between paper towels and top with some heavy pans for 30 to 40 Minutes.
- In the meantime, in a medium bowl combine the almond milk, cornstarch, and buffalo sauce.
- In a separate bowl whisk together the panko, smoked paprika, salt, garlic powder and black pepper.
- Cut pressed tofu into 1/2-inch cubes.
- Dip each tofu cube in the batter with one hand and transfer to the breading bowl use the other hand to coat with the mixture, transfer back to the batter and again to the breading mixture. Placed on top of a cutting board and spray some non-stick cooking oil.
- Select Air Fry – 400 °F and set the time for 18 Minutes. Press Start.
- When the Air Fryer has finished preheating place the tofu bites into the basket.
- Halfway cooking shakes the basket.
- When the cooking time is completed, transfer the tofu bites to a plate, serve with vegan blue cheese or ranch dip. Enjoy!
