  • 1 cup Basmati rice
  • 1 1/4 cup Water
  • 1 tablespoon ghee or oil
  • 1/2 teaspoon cumin seeds or Jeera
  • 1/2 tablespoon ginger paste
  • 1/2 tablespoons garlic paste
  • 1/2 onion thinly sliced
  • 1 beet cut into small pieces
  • 1/2 cup green peas
  • 1 tablespoon lemon juice

  • 1 inch stick cinnamon or Dal chini
  • 1 bay leaf or Tej Patta
  • 1 star anise
  • 6 black peppercorns
  • 3 cloves or Laung
Spices
  • 2 teaspoon salt
  • 1/2 teaspoon cayenne or red chili powder
  • 1/2 teaspoon garam masala
  • 1 teaspoon coriander or Dhania powder (optional)
  • 1/4 teaspoon turmeric or Haldi powder

  • 1 bay leaf or Tej Patta
  • 1 star anise
  • 6 black peppercorns

Instructions
  1. Start the Instant Pot in Sauté mode and heat it. Add ghee, cumin seeds and whole spices and sauté them for 30 seconds until the cumin seeds change color.
  2. Add the sliced onions, ginger, garlic and sauté for 3 minutes. Add the beets, green peas and spices. Mix well.
  3. Add the rice and water to the pot. Stir the ingredients in the pot.
  4. Change the Instant Pot setting to Manual and cook for 4 minutes at high pressure.
  5. When the Instant Pot beeps, do a 10 minute Natural Release. This means let the pressure release naturally for 10 minutes, then release the remaining pressure manually.
  6. Add the lemon juice and fluff the rice. Beet Pulao is ready. Enjoy with homemade yogurt or raita.
Recipe Notes
  1. Adding whole spices is optional. You can enjoy this beet pulao even if you don't have all the whole spices in your pantry.
  2. To reduce spice, skip the cayenne.
  3. I added green peas along with the beets, as that is what I had at hand. Other possible options to add are potatoes, bell peppers, carrots and edamame.

    Delicious beautiful flavor…love the amount of heat…I used capsicum powder which is the cayenne fruit -just a shake and the whole dish had a nice “fireplace” heat in the throat. Also mashed the garlic + ginger by pestle rather than using the paste. Perfect for my husband who is under the weather at the moment. Will definitely make again and pass on! Great recipe

    I alsomashed my own garlic-ginger fresh. I would reduce the whole cloves to 1 from 3 as it can overpower the dish.

    I added chopped beetgreens, a handful of spinach, a tomato, a carrot and used a medium seeded chili from the Indian grocer. I love it.
