  • 3 tbsp olive oil
  • 2 tbsp butter
  • 2 lbs Beef Stew Meat cut into 1 inch pieces
  • 2 tsp kosher salt
  • 1/2 tsp pepper
  • 1 large onion finely diced
  • 16 ounces baby bella or cremini mushrooms
  • 1 tbsp garlic minced
  • 1/4 cup white wine
  • 1 tbsp Dijon mustard
  • 1 1/2 cups beef broth
  • 1 tbsp fresh thyme leaves or 1 tsp dried
  • 2 tbsp cornstarch
  • 2 tbsp cold water
  • 8 ounces sour cream
  • 5 ounces cream cheese softened
  • 2 ounces dry onion soup/dip mix 1 packet
  • 1 tsp garlic salt
  • 10-12 ounces hot cooked egg noodles for serving
  • 1/4 cup Italian parsley chopped for garnish, optional

  • 2 tbsp cold water
  • 8 ounces sour cream
  • 5 ounces cream cheese softened
  • 2 ounces dry onion soup/dip mix 1 packet
  • 1 tsp garlic salt
  • 10-12 ounces hot cooked egg noodles for serving
  • 1/4 cup Italian parsley chopped for garnish, optional

Instructions
  1. Add olive oil and butter to the Instant Pot. Using the display panel select the SAUTE function.
  2. Season beef with salt and pepper.
  3. When oil mixture gets hot, brown the meat on all sides, 2 minutes per side. Meat will not be cooked through. Do not crowd the pot--you may have to work in batches. Transfer browned meat to a shallow dish and cover loosely with foil.
  4. Add onion to the pot and saute for 2 minutes. Add mushrooms and saute 3 minutes more. Add garlic and cook for 1-2 minutes more.
  5. Add wine and dijon to the pot and deglaze by using a wooden spoon to scrape the brown bits from the bottom of the pot.
  6. Add beef broth and thyme, then put the browned meat back into to the pot, stirring to combine.
  7. Turn the pot off by selecting CANCEL , then secure the lid, making sure the vent is closed.
  8. Using the display panel select the MANUAL or PRESSURE COOK function*. Use the +/- keys and program the Instant Pot for 7 minutes.
  9. When the time is up, quick-release the remaining pressure. Select CANCEL and then SAUTE once again.
  10. Mix together the cornstarch and cold water in a small bowl and stir into the pot until thickened.
  11. Turn off the pot by selecting CANCEL , cool for 3 minutes and then mix in the sour cream, cream cheese, onion soup mix and garlic salt. Stir until well-incorporated and smooth.
  12. Serve hot over prepared egg noodles sprinkled with chopped Italian parsley.

    This recipe makes a ton!! Be sure to add the mushrooms. I used portabello mushrooms and oh my, it was delicious!! Easy to make and tastes so good!!

    We loved this recipe. We had tried a previous beef stroganoff recipe for the instant pot, but this one was far better with better ingredients and cam out with a much better flavor. I highly recommend it.

    Solid recipe, this was the second recipe I’ve made with my new instant pot. Makes a large amount, might even be enough for 1 1/2 lbs of noodles. Sauce came out DELICIOUS!

    Very good flavor and quite easy to make! We found the beef to be quite overcooked though (we used high quality stew meat) so next time I will try shortening the cooking time to see if that helps.

    This was my very first Instant Pot recepie. For some reason li thought it was level Easy….later found out it was level Medium. The meat was so tender and sauce delicious. My 6 & 4 year old loved it!! Will make this again.

    I totally loved this!!!! I pressure cooked an extra 4 minutes cuz i couldnt believe the meat would be tender in 7 minutes… this is sooooooooooo yummy

    First recipe i made in my pot, so simple and tasty!! We used chewy round steak and the instantpot made it melt in your mouth and so flavorful!

    The flavor of this dish was good but, I used high quality meat and it still came out tough. Also the onions from the soup mix were hard and crunchy because the recipe says to add it at the end.

    Turned out great. I had a bit larger amount of meat and it required more pressure cooking time. This was hard to gage as this was only the second dish I made with the Instant pot. However, it was very good and my husband loved it! I will definitely make it again and highly recommend.

    Needed a little more corn starch to thicken. I would add 1/4 tsp of caraway seeds to add a little zip

    Didnt have white wine vinegar so we substitued with pickle juice…turned out delicious!!!

    I have made several different varieties of beef stroganoff and this is by far the best I’ve ever had! All the others were super bland. This is the tastiest receipe and will definitely make it again.

    Good recipe! Found it to be a little salty. I would probably cut back on some of the onion soup mix, or use a low sodium version. Same with the beef broth. Would make again though!

    Sooo good! I used ACV instead of wine. And greek plain yogurt instead of sour cream. It came out great.

    Very good! I have to say cutting everything up took me awhile so it took longer to prep tham accounted for. I would double the minced garlic and garlic powder, but we really like our garlic. Very yummy and worth the effort.

    Since my wife and I are not gormet chefs, the preparation tome seemed longer than the predicted 5 minutes. Additionally, this was our very first meal that we made in our new Instant Pot. All that said, the meal was delicious and plenty for our family of five. I had seconds and we had leftovers. Definitely recommend it to anyone.

    Absolutely superb. Would use low sodium beef broth and garlic powder in place of garlic salt. Used a rich Pino Noir for the wine. Absolutely out of this world. Superb. Actually had people standing around the pot to eat it. Didn’t even get it to a plate for some folks.
