To prep:
- avocado oil
- ¼ onion minced
- 2 cloves garlic finely minced
- 4 cambray nopales cubed
- 1 lb fava beans soaked for 2-3 hours 500 g
- 2 Saladette tomatoes cubed
- Salt to taste
- 2.5 L chicken broth
To serve:
- Fresh fava beans boiled and without skin
- olive oil
- cilantro
- cotija cheese

Instructions
- Place the stainless steel inner pot inside the Instant Pot®. Press Saute and when Hot appears, add the avocado oil and stir fry the onion and garlic. Add the nopales, beans, tomato and season with salt. Add the consommé, let it boil and check for salt.
- Close and lock the Instant Pot® lid. Make sure the steam release handle is turned to Sealing. Press Bean/Chili and set the time to 8 Minutes.
- When done, press Cancel and turn the steam release handle to Venting.
- Serve in a deep dish, add the boiled fava beans, sprinkle with cotija cheese, coriander and a drizzle of olive oil.
