  • 2 lbs russet potatoes, peeled
  • ½ cup butter, melted
  • 1 cup buttermilk
  • 2 tsp salt divided
  • ¼ tsp black pepper

Instructions
  1. Rinse potatoes, peel and slice. Large chunks are just fine.
  2. Place potatoes immediately in Instant Pot and add just enough water to cover, along with 1 tsp salt.
  3. Close and lock the lid and turn the steam release handle to Sealing.
  4. Select Pressure Cook and set timer for 8 Minutes .
  5. After cook time is done, flip the steam valve to quick-release the pressure.
  6. Pour into a colander to strain, then return cooked potatoes to the pot.
  7. Add melted butter, buttermilk, black pepper, and salt, or more to taste.
  8. Use a fork or potato masher to mash to desired consistency.
  9. Serve warm and enjoy.
