Ingredients
- 2 lbs russet potatoes peeled
- 1/2 cup butter melted
- 1 cup buttermilk
- 2 tsp salt divided
- ¼ tsp black pepper

Instructions
- Rinse potatoes, peel and slice. Large chunks are just fine.
- Place potatoes immediately in Instant Pot and add just enough water to cover, along with
1 tsp salt. - Close and lock the lid and turn the steam release handle to Sealing
- Select Pressure Cook and set timer for 8 Minutes .
- After cook time is done, flip the steam valve to quick-release the pressure
- Pour into a colander to strain, then return cooked potatoes to the pot
- Add melted butter, buttermilk, black pepper, and salt, or more to taste
- Use a fork or potato masher to mash to desired consistency
- Serve warm and enjoy
