Ingredients
For the meat:
- 1 cup vegetable broth
- 1½ cup barbecue sauce divided in two
- 1 tbsp salt
- 2 lb boneless pork shoulder 900 g
For the sandwich:
- 6 brioche buns
- 2 tbsp sriracha mayonnaise or traditional mayonnaise
- ½ cup chopped lettuce
- ½ cup purple cabbage chopped
- ½ cup grated carrot
- ½ cup crispy onion

Instructions
- Place the stainless steel inner pot inside the Instant Pot®. Add the vegetable broth, half of the barbecue sauce and salt. Mix well. Add the pork fillet and stir.
- Close and lock the Instant Pot® lid. Make sure the steam release handle is turned to Sealing. Press Pressure Cook, pressure level High, and set the time to 20 Minutes.
- When done, press Cancel and turn the steam release handle to Venting. Once all the pressure has been released, open the lid and remove the bowl. Remove the pork and set the broth aside in a baking dish.
- Shred the pork with a fork. Add 2 cups of the reserved broth and the rest of the barbecue sauce. Mix.
- To assemble the sandwich, spread both inner sides of the bread with mayonnaise, add the barbecued pork and, on it, the lettuce, cabbage and carrot. Top with crispy onion.
