Ingredients
Cake:
- 3 eggs
- 2 tbsp melted butter
- 1/2 cup homemade applesauce
- 3/4 cup spiced apple cider
- 1 box yellow cake mix
- 1 tbsp brown sugar
- 1 tsp Vanilla
- 1/4 tsp nutmeg
- 1/4 tsp cinnamon
Cinnamon Sugar Topping:
- 1/4 cup sugar
- 2 tbsp cinnamon
Apple Cider Icing:
- 1 1/2 cup powdered sugar
- 3 tbsp spiced apple cider
- 1/4 tsp cinnamon

Instructions
- In a large mixing bowl combine eggs, melted butter, apple sauce, and apple cider. Using a hand mixer at medium-low speed, mix until combined.
- Add in the yellow cake mix, use the hand mixer again to combine.
- Add brown sugar, vanilla, nutmeg, and cinnamon into the batter. Using a spatula gently fold the mixture.
- Pour into a prepared Instant Pot 7” non-stick fluted cake pan. Pan should be buttered and floured evenly. Cover with aluminum foil.
- Add 1 cup of water into your Instant Pot. Using the trivet, lower the cake pan into the Instant Pot.
- Pressure Cook on High for 50 minutes.
- While cooking, mix: sugar and cinnamon for topping.
- In a separate bowl whisk: powdered sugar, apple cider, and cinnamon. Whisk until smooth and to desired consistency.
- Once the timer is up, do a Quick Release of the pressure and remove the cake pan from the Instant Pot.
- Let sit for 10 minutes. Uncover the cake pan and flip onto a serving platter.
- Sprinkle Cinnamon Sugar topping, then drizzle the Apple Cider Icing on top.
- Serve warm and enjoy!
