  • 1 box yellow cake mix

Cinnamon Sugar Topping:
  • 1/4 cup sugar
  • 2 tbsp cinnamon
Apple Cider Icing:
  • 1 1/2 cup powdered sugar
  • 3 tbsp spiced apple cider
  • 1/4 tsp cinnamon

Instructions
  1. In a large mixing bowl combine eggs, melted butter, apple sauce, and apple cider. Using a hand mixer at medium-low speed, mix until combined.
  2. Add in the yellow cake mix, use the hand mixer again to combine.
  3. Add brown sugar, vanilla, nutmeg, and cinnamon into the batter. Using a spatula gently fold the mixture.
  4. Pour into a prepared Instant Pot 7” non-stick fluted cake pan. Pan should be buttered and floured evenly. Cover with aluminum foil.
  5. Add 1 cup of water into your Instant Pot. Using the trivet, lower the cake pan into the Instant Pot.
  6. Pressure Cook on High for 50 minutes.
  7. While cooking, mix: sugar and cinnamon for topping.
  8. In a separate bowl whisk: powdered sugar, apple cider, and cinnamon. Whisk until smooth and to desired consistency.
  9. Once the timer is up, do a Quick Release of the pressure and remove the cake pan from the Instant Pot.
  10. Let sit for 10 minutes. Uncover the cake pan and flip onto a serving platter.
  11. Sprinkle Cinnamon Sugar topping, then drizzle the Apple Cider Icing on top.
  12. Serve warm and enjoy!
