Ingredients
  • 6cups brown ricecooked
  • 14.5ounces Fire Roasted Tomatoes1 can
  • 2cups salsayour favourite brand or homemade
  • 4tablespoons tomato paste
  • 3cups onionchopped
  • 6cloves garlicmore or less to taste, finely minced or pressed through a garlic press
  • 1 1/2cups Water
Instructions
  1. Place all of the ingredients in the Instant Pot and cook on high pressure for 5 minutes.
  2. When time is up, you can either release the pressure immediately or let it come down to pressure naturally. Rice will thicken slightly as it cools.
  3. You can stir in some chopped cilantro if you’d like. Top with any toppings if you please.

Note: If you have the time, you can use the sauté function and sauté the onions before adding the rest of the ingredients.
