  • 6 cups brown rice cooked
  • 14.5 ounces Fire Roasted Tomatoes 1 can
  • 2 cups salsa your favourite brand or homemade
  • 4 tablespoons tomato paste
  • 3 cups onion chopped
  • 6 cloves garlic more or less to taste, finely minced or pressed through a garlic press
  • 1 1/2 cups Water

Instructions
  1. Place all of the ingredients in the Instant Pot and cook on high pressure for 5 minutes.
  2. When time is up, you can either release the pressure immediately or let it come down to pressure naturally. Rice will thicken slightly as it cools.
  3. You can stir in some chopped cilantro if you'd like. Top with any toppings if you please.
Recipe Notes

Note: If you have the time, you can use the sauté function and sauté the onions before adding the rest of the ingredients.

    These instructions are horrible. Is it cooked rice or not? Brown rice takes 22 minutes to cook not 5.

    My Husband loved it. However, you must use exact amount of cooked rice. Frech cilantro and a squeeze of lemon juice make it extra savory. Loved it because it was a simple, semi quick and cheap vegan recipe.

    Cmon!! If you follow the recipe it will come out great!!! First make the brown rice then make this recipe with your cooked brown rice! Yum!

    I loved it! I cooked the rice first. It took 4 minutes. Then I made this recipe just the ways its says! Great dinner with beans and tortillas!

    Saute the onions or they may be a little crunchy. Add the liquids first and then the cooked rice and measure exact amont of rice. Stir and cook. Could use some hot peppers for my taste.

    The taste is good but there wasnt enough water for the rice to cook through and it was still slightly crunchy.

    Used cooked brown rice, tried to follow recipe exactly, cooking in 8 qt instapot, burn notice alternating automatically with preheat multiple times, but finally landed on burn notice only. Had to empty and finish on stove (bottom of pot caked on burnt rice). I did mix all ingredients instead of layering…maybe that was the problem?

    When using the 8 Quart, we recommend adding up to 1/4 cup more water . Also adding the rice and water then layer the additional ingredients will ensure it doesn’t burn.

    Mine also signalled “burn” so I cancelled the cooking and opened it when the steam dissipated. I added a
    Cup of water and then turned it back on for 5 minutes because the rice was still uncooked. It was really tasty and I will make it again but with more liquid.
