No need to bring a pot to boil with this super-easy air fried potato salad! Make sure to use gold potatoes
for this recipe, as Russets will be too starchy. This dressing is a riff on a classic German-style potato
salad. Feel free to mix up the dressing with mayonnaise for a different flavor combination.

- 4 cups Yukon gold potatoes large dice
- 1 tbsp olive oil
- 1 yellow onion large dice
- 2 scallions diced
- 2 tbsp whole-grain mustard
- ¼ cup white distilled vinegar
- 1 tbsp sugar
- 2 tsp salt divided
- 1 tsp black pepper

Instructions
- In a large bowl, toss the potatoes, onion, olive oil, and half of the salt together.
- Air Fry at 400°F / 205°C for 15-17 Minutes, or until golden and crispy on the edges.
- Meanwhile, whisk the whole grain mustard, white distilled vinegar, sugar, the remaining salt, and black pepper together until emulsified.
- Toss the fried potatoes with the dressing and the diced scallions. Serve warm or cold.
