No need to bring a pot to boil with this super-easy air fried potato salad! Make sure to use gold potatoes for this recipe, as Russets will be too starchy. This dressing is a riff on a classic German-style potato salad. Feel free to mix up the dressing with mayonnaise for a different flavor combination.

Instructions
  1. In a large bowl, toss the potatoes, onion, olive oil, and half of the salt together.
  2. Air Fry at 400°F / 205°C for 15-17 Minutes, or until golden and crispy on the edges.
  3. Meanwhile, whisk the whole grain mustard, white distilled vinegar, sugar, the remaining salt, and black pepper together until emulsified.
  4. Toss the fried potatoes with the dressing and the diced scallions. Serve warm or cold.
