Air Fried Red Pepper Salmon with Green Beans and Baby Potatoes

Ingredients
- 2 salmon fillets
- 8 oz roasted red peppers drained
- ¼ cup oil-packed sun-dried tomatoes drained
- 2 tbsp extra-virgin olive oil
- 1 tsp honey
- 3 garlic cloves
- 1 tbsp lemon juice
- 1 tsp smoked paprika
- 1/2 tsp cumin
- ½ tsp dried oregano
- ¼ tsp red pepper flakes
- 1 tsp kosher salt
- ½ tsp Black pepper to taste
- ½ lemon cut into 4 slices
For potatoes
- 2 cups baby potatoes cut in halves, 350g
- 1-2 tbsp of red pepper paste

- 5 oz green beans cleaned
- 2 tsp extra-virgin olive oil
- Kosher salt and black pepper to taste
For serving
- ½ cup tzatziki
- Fresh dill if desired

Instructions
- In a blender, add the red peppers, sun-dried tomatoes, extra virgin olive oil, honey, garlic cloves, lemon juice, smoked paprika, cumin, dried oregano, red pepper flakes, kosher salt, and black pepper.
- Blend the mixture at a low speed. Don't blend it too smooth.
- In a medium bowl, add 1-2 tablespoonfuls of the red pepper paste and coat well with the baby tomatoes.
- In another medium bowl, add green beans, olive oil, salt, and pepper. Mix it well.
- Place the salmon fillets on a cutting board and 1-2 Spoonfuls of the red pepper paste and lay two slices of the lemon on the salmon fillets.
- Select Air fryer, set the temperature to 400 °F, and the timer to 15 min . Press Start.
- Once the air fryer is preheated, open the air fryer basket, and place the two salmon fillets and the potatoes carefully into the basket. Close the basket.
- Once the air fryer shows the Turn Food sign, open the basket and place the green beans evenly on the potatoes.
- Once the cooking cycle is done, open the basket, remove the salmon fillets, and place them evenly on each serving plate.
- Serve the salmon topped with tzatziki and fresh dill.
