Instructions
  1. Preheat oven to 400℉. While the oven is preheating, place the butter in a 9 inch x 13 inch baking pan and put pan in the oven allowing the butter to melt.
  2. Add remaining ingredients to the blender pitcher and secure lid.
  3. Blend on “Low” manual setting for 5-10 seconds until ingredients are well combined. Select “Cancel” to stop blending.
  4. When oven is preheated and butter is melted in a pan, using hot pads, carefully remove the pan from the oven and pour the pancake batter into the pan. Return the pan to the oven and bake for 20-25 minutes until golden brown and the pancake grows up the sides of the pan.
  5. Serve with fresh fruit, a squeeze of lemon juice, powdered sugar, your favorite syrup or a combination of them all.

I’ve been making these since I was in College. We had this uber cool cabin in Pioneer California I would invite Dollies to and serve them David Err pankcakes with fresh lemon and powered sugar sprinkled all over the top. Rave reviews form all who visitied. Cut up strawberries are also good on top.

These pancakes were delicious! When I make them again, I will cut back on the flour for a lighter pancake.
