Ingredients
  • 1 1/2cups quinoarinsed
  • 1cup mixed veggies
  • 3leaves kalechopped
  • 1handful dried cranberriesoptional or use raisins
  • 1/2teaspoon paprika
  • 1teaspoon dried oregano
  • 1/2teaspoon ground cumin
  • 1-4pinches saltto your taste
  • 2teaspoons sesame seedsoptional
  • 1 1/2cups Water
Instructions
  1. Rinse quinoa in water, I didn’t soak the quinoa.
  2. Into the pot add all the above mentioned ingredients. You could add any kind of seasonings you want.
  3. Close and lock the lid of the Instant Pot. Make sure pressure release valve is in sealing position.
  4. Click Manual, then click Pressure- choose high pressure. Set time to 1 minute and walk away. It will take a few minutes for the pressure to build, after that the timer will start.
  5. After 1 minute, you will hear the beep. Let the pressure release naturally for 5 minutes, after that turn the pressure release valve to venting. After the steam has completely released, open the lid.
  6. Perfectly cooked quinoa is ready to be served. I like the bite of dried cranberries- it has a sweet and tart taste. If you don’t have dried cranberries, add raisins instead.
  7. Serve Mixed veg quinoa along with grilled or baked chicken, fish or roasted veggies.
