  • 4 slices bread (any kind) torn into 1 inch pieces
  • 2 eggs
  • 1 1/4 cup milk
  • 1/4 cup brown sugar
  • 1/3 cup maple syrup or more brown sugar
  • 1/8 tsp salt
  • 1/8 tsp nutmeg optional
  • 1/2 tsp Vanilla
Optional:
  • 1/2 cup nuts raisins, chocolate chips or whatever strikes your fancy

Instructions
  1. Whisk together everything except the bread. Pour over the bread and let it soak in for a few minutes. Spray a 6-cup bundt pan, a 6 or 7-inch cake pan or casserole dish with cooking spray. Pour the whole mixture into the pan and cover it with tin foil.
  2. Put 1 1/2 cups water in the Instant Pot. Put the pudding on the trivet in the IP, close the lid and make sure the valve is set to Sealing. Push the Pressure Cook (or Manual) button and use the + or – button to get to 25 minutes.   3. When it beeps that it's done, leave it for a 10 minute natural release. Then flip the valve from Sealing to Venting for a quick release of any remaining pressure and when the pin drops, open the pot. Lift the pudding out and remove its “tin foil hat.”
  4. Leave it to cool on the counter for a few minutes and then invert onto a plate. Serve warm or chilled with whipped cream, ice cream or caramel sauce.
  5. This can take less than 3 minutes to throw together. And it is SO delicious. A real, old-fashioned taste from my childhood.

    I made this and at the last minute before I poured it into pan I tossed in a handful of extra dark chocolate chips. It turned out fabulous. Making again tomorrow.

    Ok, I must have done something wrong…mine turned out like mush. I put some nuts and raisins in it, it tastes good but the texture is mushy and unappealing. This is my first attempt at something other than stews and meat dishes…the picture looks so yummy.

    Not bad at all. Good flavor. I used 4 cups French bread loosely packed. Next time, maybe a half cup or so more. it wasn’t runny, but would just like a little more.

    Good recipe. I made it in two wide-mouth Mason jars. Did a mixture of dried yellow cake, whole wheat bread and thick-sliced white bread. I used real maple syrup and whole milk. No regrets. Added dark Ghirardelli chocolate morsels. I will definitely consider using extra pumpkin pie filling (my recipe is heavy on the eggs and cream) when i have it.

    Very easy. I made it in 3 mason jars filled halfway of mixture each. Good portion size. Served with a little extra maple syrup. Make sure to use the real stuff!

    Excellent! Using a dense bread, cubed & air dried on cookie sheet is best (French bread). Added toasted pecans & raisins. Also made a sauce of 1/2 C butter, 1/2 C white sugar, 1/2 C cream & 1/4 C whiskey by bringing to a low boil stirring constantly. Soooo good poured over the warm bread pudding when served.

    This was delicious, but I was surprised to see this recipe does not include cinnamon. I added about 1/2 tsp of cinnamon and it really helped add a great flavor. Thanks for this recipe!
