Banana Walnut Baked Oatmeal

Ingredients
- 1 cup plain whole-milk Greek yogurt
- ⅔ cup milk or non-dairy milk
- ⅓ cup maple syrup or honey
- 1 egg, lightly beaten
- 1 tbsp olive oil
- 2 tbsp flaxseed meal
- 1 ½ tsp baking powder
- 1 tsp vanilla
- 1 tsp salt
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- 1 cup regular rolled oats
- 1 banana, peeled and sliced
- ½ cup toasted chopped walnuts
- ½ cup raisins, dried cranberries, dried cherries, and/or dried blueberries

- Lightly coat 5 half-pint canning jars with nonstick cooking spray. In a large bowl combine the first 11 ingredients (through nutmeg). Stir in oats, banana, walnuts, and raisins. Spoon into prepared jars; cover each with foil.
- Add
1 cup water to a6-qt Instant Pot; insert wire rack. Carefully place each jar on the rack. Lock lid in place. Set Instant Pot on High Pressureto cook 8 Minutes. Turn off Instant Pot; let stand 10 Minutes to release pressure naturally. Release any remaining pressure. Open lid carefully. Use hot pads to carefully remove jars to a wire rack; uncover and cool 10 Minutes. If you like, top with additional banana slices and walnuts.
